- Jackfruit carnitas – these spicy and smoky slow cooked jackfruit is the perfect meatless topping for vegetarian nachos. Follow this recipe for easy jackfruit carnitas
- Cheese – I recommend cheddar or a mix of cheddar and Monterey Jack. What differentiates a great nacho from a good nacho is how well the cheese melts. If you’re using real cheese make sure to buy a cheese block instead of pre-shredded cheese. Shredded cheese does not melt as well due to how it is processed for packaging. If you’re looking for dairy-free cheese options I recommend Daiya!
- Corn Tortilla Chips – any store bought brand will work or make your’s from scratch
- Loaded nachos toppings – the list can be endless but here are a couple of guest favorites:
- Tomatos
- Cilantro
- Onion – white or red depending on how sharp you want the onion flavor to taste
- Jalapeños – pickled in brine for a salty taste or fresh for a sharp spice
- Avocados
- Beans – refried beans, pinto beans, or black beans
- Corn
- Plant-based meats such as soyrizo or tofu crumbles

- Make the jackfruit carnitas. Follow my recipe for easy one-pot jackfruit carnitas. This recipe requires stewing the jackfruit for roughly an hour so do this step first! After cooking let rest for around 15 minutes to cool down while you start on the nachos.Note: you'll likely only need around half the amount of this recipe for the nachos. I recommend making the entire batch and storing the leftovers for tacos!
- Prep the nacho toppings. Dice the white onion and tomatoes. Remove the cilantro leaves from the stems and discard the stems. Shred the cheese if you're using real cheese. Cut the lime into wedges for serving.
- Melt the cheese. Preheat oven to 400℉. Place parchment paper on top of a baking tray. Spread the corn tortillas across the parchment paper. We want the chips to layer on top of each other! Sprinkle on half the grated cheese then add a layer of the jackfruit carnitas. Top off with another layer of the cheese. Place in the oven and bake for around 5-7 minutes. I would watch carefully, depending on the strength of your oven.
- Add the toppings. Sprinkle on the toppings and place the lime wedges throughout for guests to use!
