Chipotle Black Bean Smash Burger

What is a smash burger?
Smash burgers were popularized by the popular fast food chain, Smashburgers, and it involves using a spatula to smash the patty down on a hot griddle so that the result is a thin patty with browning and crispy texture on the edges. It is often times served with two patties stacked together and has all the components of a regular hamburger or cheeseburger.
Key ingredients for a chipotle black bean patty
- Black Beans – a popular ingredient for meatless hamburger patties
- Panko – This helps to bind everything together since this recipe is dairy-free and does not use any eggs. Without panko the black beans are just too soft and fall apart easily
- Flavor Bombs – this includes roasted yellow onions, roasted garlic, miso paste, and chipotle peppers in adobo sauce. The chipotle peppers give the patty a delicious smokey chipotle flavor.
Substitutions
- Panko – use any type of bread crumbs to bind the patty together
- Chipotle peppers in adobo sauce – I have also made this recipe with gochujang before for delicious gochujang black bean patties
- Miso Paste – you can skip this or substitute with soy sauce
- Parchment paper – used to form the circle patties. You can substitute with wax paper
How to create a round burger patty
Step 1. Place a piece of parchment paper at the bottom and place the rolled mixture on top

Step 2. Place another piece of parchment paper on top of the round patty.

Step 3. Place a flat surface on top such as a cutting board. Press down firm but do not completely press down to the bottom. You want to save at least half an inch of thickness.

Step 4. Remove the parchment paper and now you have a perfectly round patty!

Ingredients
Chipotle Black Bean Patty
- 32 oz black beans 2 cans
- 1 medium yellow onion
- 1 head of garlic
- 1 cup panko see notes above for substitution
- 1 tbsp miso paste see notes above for substitution
- 1 tbsp chipotle peppers in adobo sauce see notes above for substitution
Cooking Ingredients
- 1 tbsp cooking oil
- salt for taste
- pepper for taste
Instructions
- Roast vegetables. Preheat the oven to 375℉. Cut the onion and head of garlic in half and drizzle with olive oil until well coated. Optional: season lightly with salt and pepper. Place the onion and garlic on a backing sheet with aluminum foil. Bake for 20 minutes. After it's roasted remove the skin off the roasted onions and garlic.
- Black Bean Mixture. Drain and rinse the black beans. Use a towel to pat the beans dry. If using dried black beans make sure to fully cook first. In a food processor, pulse the black beans, roasted onions, roasted garlic, miso paste, and chipotle peppers in adobo sauce so that they are well combined. Transfer to a bowl and fold in the panko using a spoon until well combined.Note: Add more panko if you find mixture to be too wet. Add a tbsp of water if you find the mixture to be too dry.
- Form Patty. Roll about ½ cup of black bean mixture into a well formed ball using your hands. Note: the amount of mixture you use will depend on how big you want your patties to be and the size of the buns you are using. I typically use small buns that are about 5 inches in diameter. The bigger the buns the more mixture you'll want to use. You can play around with this to your liking!
- Form Patty. Take one piece of parchment paper and lay it flat on the table. Place a rolled patty mixture on top and then place a second piece of parchment paper on top of the ball. Using a flat surface such as a flat lid or a flat cutting board, press on top of the parchment paper to form a circular patty shape. Stop pressing when the patty is about half an inch tall. Remove the patty from the parchment paper and set aside. Repeat for the rest of the patties. The parchment paper is to prevent the patty from sticking to any surfaces.
- Cook Patty. Heat up a skillet over medium to high heat and add 1 tbsp of oil. Once the oil is hot place your patty on the skillet and cook for 3 minutes before flipping over, cooking for another 3 minutes. Use a spatula to firmly press the patty against the hot skillet, creating burned bits for an even more intense flavor. Optional: place some cheese on top in the last minute so that it gets hot and slightly melted.
- Serve. Serve with hamburger buns, lettuce, tomatoes, and pickles.
